Andhra Pulihora ~ Tamarind Rice


Ingredients :


Cooked Rice : 2 to 3 cups
Tamarind : lemon size ball
Green Chillies : 4
Whole Red Chillies : 2
Peanuts : 1 tbsp
Cashews : 2 tsp
Mustard Seeds : 1 tsp
Chana Dal : 1 tsp
Urad Dal : 1 tsp
Curry Leaves : 2 stems
Turmeric Powder : 1/4 tsp
Salt to taste
A pinch of hing
Oil : 2 tbsp


Method :


Soak the tamarind in water for 10 minutes. Then squeeze the extract out of it and set aside. Heat oil in a wide vessel. Add the mustard seeds, chana dal, urad dal and peanuts and fry them. When they start to splutter, add the split green chillies, cashews, curry leaves and hing and fry for few minutes. Now add the tamarind pulp and turmeric powder to it. Cook the mixture till oil comes out. When the tamarind becomes thick, add the salt and mix well. Switch off the flame. Add the cooker rice and mix very well and serve.
