i love baking. especially when i find yummy recipes that are easy easy easy. i got this cookbook at one of my bridal showers and it is a gift from heaven. i love it! one of my new favorite recipes is for easy ice cream sandwiches. 1 devil's food cake mix
1/3 cup oil
2 eggs
1/2 gallon vanilla ice cream
(my favorite is dreyer's slow churned vanilla bean - its half the fat and just as delicious!)
preheat oven to 350 degrees. mix together cake mix, oil, and eggs in large bowl. the dough will be stiff. lightly flour a clean surface. roll out the dough with a rolling pin until it is about 1/2-inch thick. use a round cup or cookie cutter to cut out uniform cookies. spray a cookie sheet with vegetable oil. place the cut-out dough on the pan.
bake 8-10 minutes (if small cookies only like 6-7 min). remove cookies onto a cooling rack.
when cool, place a scoopful of ice cream in-between 2 cookies. wrap the sandwiches in plastic wrap. store cookies in airtight container in the freezer.
***i have made these twice and the second time i just made the sandwiches right before i served them and they turned out much better...they don't always set up well in the freezer. ***
these babies are so easy and always a hit.
